What is it about green vegetables that make people want to run away and hide? I was a weird child, I liked all vegetables. EXCEPT PEAS. I draw the line at green peas. Blech. Anyways, I just don’t get it. It seems like children in particular as well as those of the (ahem) male persuasion don’t enjoy vegetables period save for corn and potatoes (and we all know those are the least vegetable-y vegetables out there). Was there some sort of news bulletin released saying that only women should eat green vegetables? “Breaking news: It’s been discovered that children under the age of 18 and anyone with a Y chromosome will in fact experience green pigmentation of the skin if they consume green vegetables. It’s been named ‘JGG Syndrome.’ Otherwise known as ‘Jolly Green Giant Syndrome.'” C’mon guys. A little green skin never hurt anybody.
I mean besides these poor dudes. Meh I’m sure they’ll be alright.
So let’s talk zucchini…
I’ve done some experimenting trying to convert the veggie haters in my life and I’ve found surprising success with Zucchini. It isn’t your typical go to veggie side dish but honey let me tell you, it’s definitely a dinner time game changer. It doesn’t smell funny, it doesn’t have a weird texture, and it’s not one of those vegetables that look like it was first cultivated on Jupiter. Give it a try! I guarantee that your little picky eaters (and big picky eaters) will utter the most shocking words, “More vegetables please!”
Side note: Try breading and frying the zucchini. The easiest way to trick a picky eater into eating something they don’t like is to fry it! Who can resist a blanket of crunchy golden-brown goodness?
Turn your veggie haters into green machines with the easy recipe for Roasted Zucchini.
- 1 lb zucchini
- 2 cloves garlic minced
- 1 1/2 tbsp olive oil
- salt & pepper (to taste)
- nature's seasoning (to taste)
Preheat oven to 450 °F and line a cookie sheet or any long pan or baking dish with foil.
(Behold the mighty zucchini!)
Cut zucchini in half down the middle.
Cut each half in half (I know that sounds weird).
Cut in half again if necessary and then cut into smaller pieces.
In a large bowl, toss zucchini with olive oil and garlic.
Spread zucchini out onto foil lined pan. Try your best to arrange them skin side down but it's ok if some of the pieces aren't like this.
Season zucchini with pepper and Nature's Seasoning.
Roast zucchini until it starts to turn brown or until it feels tender when pierced with a fork. This should take roughly 15 minutes.
Once brown or tender, remove zucchini from oven and add extra seasoning as needed and cook for an additional 5 minutes if necessary.
Happy Summer Solstice everyone! It’s officially the first day of my favorite season! Unfortunately for me, warm weather is just one more excuse for me to eat ice cream. I’ve been trying soooo hard not to eat ice cream like every single day. Still trying to achieve that Summer body ya know? Well, the other day I had a moment of weakness. I was doing my grocery shopping and I thought that I’d just peek to see if any ice cream was on sale. Just…out of curiosity. Wasn’t planning on buying anything. Walked past Dreyers. Nope. Walked past Breyers. Nada. Turkey Hill…Store Brand…Ben & Jerry’s. Negative. But wait, what’s this? Talenti Gelato…Buy 2 for $7. It would be wrong not to get it!
This was my first time trying Talenti. This stuff ain’t cheap! But my friends have always said that this stuff is to die for. Let me tell you, I’ve found love in the frozen food aisle. This creamy magnificence is definitely Netflix binge watching material. Chill guys, I didn’t eat this all by myself. I shared the Caramel Cookie Crunch yesterday and believe it or not the Chocolate Chip Cookie Dough is still in the freezer (not for long!). I have to admit though, I found myself forgetting to share. The gelato is perfectly creamy with rich swirls of caramel woven throughout. As if that wasn’t bad enough, there are countless crunchy little cookie balls mixed in (can we get a yum in here?). You know the moment when you’re relentlessly scraping the bottom of the container with your spoon and the person next to you is saying “Hey, it’s gone.”? But you don’t want to listen to them because you don’t want to wake up from your ice cream induced coma. That may or may not have happened. But guys, I know I’m not the only one that does that. I know you do it to!
As I said before, Talenti isn’t cheap. But if my grocery store continues to have sales like this, let’s just say I’ll probably be wearing t-shirts to the beach this Summer.

Aggghhh who’s ready for Summer?! 🙂 I am! Me! This girl right here! It’s not feeling like Summer quite yet in Pennsylvania but I just can’t take it any longer. I’ve gotta break out the flip-flops. This is exactly why I need to go home guys. I belong in San Diego, I’m not about this east coast life! I basically live in flip flops and this weather is making me sad. (There was literally frozen rain tumbling from the skies yesterday, what’s up with that!?)
If you couldn’t already tell from the scream that I typed, I love Summer! Shorts, beaches, amusement parks, and ice cream! It’s not summer without a good ol’ ice cream cone! In celebration of the start of Summer, here we have a vanilla ice cream cone from the Berkey Creamery at my school, Penn State. Simple? Not so much. I mean look at the size of those scoops! You can barely see the cone! I don’t know about you, but that’s how I like my ice cream. Basically the Scoopers (is that their job title? Scooper? That would be awesome to put on my resume) slap on your standard double scoop. Pretty normal. And then they start packing scoops onto the sides! Is your mind not blown? And that’s how EVERY SINGLE cone is made. They all look like this. Um, can there be a law that every ice cream shop has to serve ice cream this way? 😛
The only rule here is that you can’t mix flavors. It’s said that in 1996, Bill Clinton managed to snag a cone with both Peachy Paterno AND Cherry Quist making him the only known person to have ever received a two-flavor cone. Sooo yeah guys, just don’t even ask.
But don’t worry, the flavors are fantastic! They have everything from your standard cookies and cream to Apple Cobbler Crunch to Bananas Foster! Fun Fact: Ben & Jerry are 1978 alumni of the Penn State Creamery correspondence course in ice cream-making. Yes, THE Ben & Jerry! Yeah I know, my school is kinda awesome.
